Prairie View Elementary is Serving Up Awesome Fresh Veggies
We have made an effort during this school year to menu more fresh veggies and purchasing local if possible. Before, when fresh veggies were on the menu, sometimes all you would see was baby carrots. We worked with our managers and produce companies to enable them to order a wider variety for our students to experience. Fresh broccoli, cauliflower, cherry tomatoes, grape tomatoes, cucumbers, carrots, celery, assorted peppers with low fat ranch dressing and some homemade dressings made with yogurt have been a huge hit. We were really surprised at how many students said they had never tried celery or cherry tomatoes before. The same with the other veggies. This was a great experience for our staff. They offered students tastes of items they hadn't tasted before and if they ate all of their veggies, the monitors allowed them to come and get more. We have seen a large increase in fresh veggie consumption and they are loving the dairy based dips to go along with them. Better yet, we have seen a decrease in waste.

How do you plan to make this Play last during the school year and beyond?

We have seen how willing the students are to eat fresh veggies and with less waste so we will continue to menu fresh veggies and items to make their own tossed salad. We will also work with our produce company to offer unique items from time to time like Jicama, sweet potato sticks, etc.
